VEGGIE BURGERS

LET’S COOK WITH TEXTURED VEGETABLE PROTEIN TVP

Due to high popularity of hamburgers or commonly called patty, everybody has an idea what it is or how to make them. In most cases, we refer to a sort of mince of meat with a round shape which is usually eaten between two pieces of bread and accompanied with fresh vegetables and sauces.

A variant to a regular burgers is the one that we call veggie burgers, hamburger for vegetarian people or simply, vegan hamburger where real meat is substituted by TVP (textured vegetable protein) or TSP (textured soy protein). This can be added directly or can be hydrated with clean water before cooking. This process, will allow to the TVP or TSP to growth in its volume and becomes soft at the time of using.

A benefit of using hydrated TVP or TSP, textured vegetable protein or textured soy protein respectively, is that is not likely to be dissolve when is mixing up with other ingredients even when is cooking. The only weak pointy is that TVP, does not fulfill the function of agglomerating for itself so, we should add some extra ingredients to fulfill this characteristic (make the preparation stickier allowing it to have a better hydration and texture) One of these ingredients can be wheat flour.

Following, a home-made recipe !!!

INGREDIENTS:
  • 200 gr TVP, TSP (Textured Vegetable Protein, Textured Soy Protein)
  • ½ cup of bread crums.
  • 1 sp. of garlic pouder
  • 1 sp. of chopped parsley
  • 1 sp. of Rosemary
  • 1 cup of wheat flowr.
  • 1 sp. of soy sauce.
  • ¼ cup of soy milk.
  • Olive oil to fry.
PREPARATION:

1- Put TVP, TSP in a bowl or saucepan and then pour hot water in it and leave for 30 minutes approximately and then drain to take the excess of water out (TVP must be soft)

2- Mix up the spices, bread crumbs, soy sauce, soy milk and the hydrated TVP and add wheat flour little by little while continue mixing the dough. Note: The dough should become consistent not too sticky and easy to handle.

3- Once consistency is achieved, make some balls and press them down. If you find that the dough sticked on your hands, add some more wheat flour and if the dough seeks to break, check the content of moisture and if its needs, add water.

4- Finally, fry the hamburgers in a frypan or a fry machine with a bit of oil for 2-3 minutes each side over medium heat and then serve. Veggies Hamburgers can be serve with soy cheese, green leaves, tomato sauces, mustard, peppers or whatever comes to your mind. Enjoy!
