Corrective flour, designed for processing in very demanding processes or to improve defects of poor flours.
Its main characteristics are: high gluten content, producing greater water absorption, higher yield, improves the color of the crumb, above all it grants a greater tolerance to the excesses in general as over fermentation, over kneading, etc. Allowing to obtain lighter and better volume pieces.
