INFORMATION

This flour features high gluten content and additives to ensure normal development in the different bread-making processes to obtain products with high specific volume, crispy crust and optimal color as well as uniform structure dough to extend freshness.

Great versatility
Adaptable to most baking methods: long fermentation (Straight-Dough Method) and short fermentation periods (Direct and semi-direct method).

0000 Flour

 
INFORMATION

Produced from carefully selected semolina varieties from the first stage of the milling process. This flour features low ash content and is creamy white. The granulation is finer than “000” flour. It is used to manufacture pasta and in bakery products. It contributes to the color of dough and has low bacterial content.

Pro Tapa and Pasta

 
INFORMATION

This flour produces dough with excellent appearance: very fine granulation, low ash and very low level of pitting. Such features give dough excellent appearance. It improves raw products’ shelf life due to its low microorganism count. It is excellent for making empanadas, tarts (pie), and flaky rolled products. It is widely used to manufacture Fresh Pasta.

Semolín

 
INFORMATION

They are fragments of endosperm from the first milling stages. Semolina is considered an intermediate product. It is used in pasta production: macaroni, spaghetti, noodles. It improves dough texture and crispiness and has a deeper yellow color.

000 Low Gluten Content

 
INFORMATION

This flour has low Gluten content obtained from low protein wheat. Specially recommended to manufacture Wafers and Cornets. It produces stable density batters, since it does not create lumps, ensuring greater efficiency and performance in the production process.

INFORMATION

Designed for the production of Panettone. It delivers dough that bears the load of products that interrupt the structure of the crust, with high kneading tolerance, enduring continuous and extended processes, which enables consistent behavior during fermentation.

INFORMATION

For production of high-quality Pizza very easily. It also adapts to baked products that require extensible flour types, such as pastries, rings, etc.
It reduces kneading time, facilitates forming and stretching, absorbs more water, improves oven transitions, allows to obtain thick crust or thin crust pizzas, and moreover, improves yield.

Pro Pan Francés

 
INFORMATION

This flour simplifies the work, doing away with formulation errors, minimizing variations of the finished product and avoids weighing ingredients; it generates a more tolerant dough and reduces total manufacturing time. This formulation does not require additives or mixing with other flour types or pre-mixtures; just add water, salt and yeast.

Pro Miga 000

 
INFORMATION

Specially formulated for English bread. This whole flour is centered on the product and its final characteristics. The customer follows the usual formula and adds salt, shortening and additives according to the recipe. This product delivers a significant difference in mold filling (complete), perfect honeycomb structure, optimal crumb color, excellent flexibility and very good moisture retention.

Pro Miga 0000

 
INFORMATION

Specially formulated to make English bread. Unlike the PRO MIGA 000, this flour is made only with 0000 flour, which produces a bright white color crumb, while preserving perfect honeycomb and flexibility properties.

Max Gluten

 
INFORMATION

Corrective flour, designed for production in very demanding processes or to improve defects in deficient flour types.
Its main features are high-gluten content, producing greater water absorption, enhanced yield, and improved dough color. Overall, it enables better tolerance to excesses in general, such as over-fermentation, over-kneading, etc., to obtain lighter pizzas with better volume.

Reception and Storage


We analyze the baking quality of wheat and according to the results, we segregate the raw material in different storages specially designed to maintain raw material quality unalterable.

Mixture


A blend of different segregated qualities of wheat to obtain sustained quality of the finished product.

Cleaning


Grains are cleaned in different stages in order to remove impurities, thus minimizing physical and microbial contamination.

Wetting


The clean wheat is wetted for 36 hours to facilitate the separation of the endosperm from the bran.

Milling


Grains´ grind in successive stages, resulting in their gradual reduction to extract flour and semolina.

Sifting


Milled wheat is classified by size and purified through specific equipment.

Storage


0000 and 000 flours are stored in steel bins, while the bran is pre-compressed into pellets for bulk storage.

Packing


This is performed with a high-tech, automated system in 25 kg and 50 kg bags and big bags.

Loading


25 kg and 50 kg bags are loaded on trucks by an automated robotic system. We also load in palletized bags, big bags and bulk.
